Sweet Potato + Baked Beans = Yum

Now that I'm (finally) done with school, I have a lot of extra time on hands and being as bored as I was at work today, I decided to be productive. Shocked? I know I am. Not only did I write out my workouts for the week, but I even created a cute little chart to write them in! Yay me! I can't put it up right now because the internet is against me, but it will definitely be up tomorrow. Feel free to use it if you'd like (:

Breakfast was thrown together in a matter of seconds since I was on the run. Ezekiel sprouted grain bread with the crunchy almond butter I picked up at Trader Joe's in Pittsburgh over the weekend.


Seriously this stuff was GOOD. Wayyyyy better than the first almond butter I tried, which I think was the blue diamond kind? This also had flaxseed in it! Double score.


For a mid-afternoon snack, I whipped me up a blueberry banana and chia seed smoothie! After reading so many posts in the blog world with bloggers adding chia seeds to just about everything, I was totally stoked to finally find some at a health food store nearby. Totally. Stoked.


I really like the texture that chia seeds add to smoothies. I mean, yeah, they're kinda on the slimy side but I love the crunch they add. What I don't love however is when they get stuck in my teeth! lol

Lunch was pretty much my fav. I recreated my favorite house salad from Up A Creek - spring greens with chickpeas, black olives, red onion, cucumber and raspberry vinaigrette. Mmmm delish!


And finally dinnertime! I actually tried something new tonight - the sweet potato/baked beans combo that I've been seeing over and over again through the blogsphere. Really really quick and easy to throw together at work. It was way more filling than I thought it'd be, I couldn't even eat it all! Definitely will make this again whenever I need a fast dinner.


Notice anything about my meals today? No meat! Props if you got that right. I've been leaning in this direction for a while lately and I think it's time I just do it. It's crazy how you really don't even miss meat. I don't feel less full or less satisfied. Plus I'm interested in learning a few new veggie recipes.

Any other vegetarians out there? Vegans maybe? What is your favorite go-to recipe when you're craving a good, fast all veggie meal?

  1. I know what you mean about seeing chia seeds EVERYWHERE! I'm thinking I'm going to have to jump on the bandwagon pretty soon as well. I'm definitely not vegetarian or vegan, (although I don't eat red meat) and there are very few days that go by that I don't eat meat products. I've been considering making one day per week a meatless day, but I'm working on gathering up some yummy veggie recipes first! The sweet potato and baked beans combo is now on the list! :)

  2. you should definitely try chia seeds out - i'm liking them so far! and i actually was vegan for a little over half a year. it's shocking to find out how many foods you'd never guessed have animal products in them lol
