Pumpkin Oatmeal Pancakes

Admittedly, I consume enough pumpkin to support a small farm. If you were to look through what few recipes I have posted, I'm pretty sure somewhere between 40-60% involve it in some way. I have no real defense for this, just the fact that I really like pumpkin.

So when I decided to make The Healthy Apron's Banana Bread Oatmeal Pancakes this morning, umm of course I had to tweak it for a little pumpkin action, right?!


Seriously, these are ahhhmazing! As if I needed another pumpkin recipe to add to my repertoire. My poor future children will probably resemble small pumpkins by the time they're toddlers. At least they'll be cute!

Pumpkin Oatmeal Pancakes
1/2 cup of old fashioned oats, ground
1/2 cup 100% whole wheat flour
1 TBSP brown sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp baking powder
1 1/2 TBSP butter, melted
1/4 tsp pure vanilla extract
1/2 cup + 2 TBSP almond milk
1/2 TBSP honey
1 large egg
1/2 cup cooked oats (mine were made with 1/2 cup pumpkin,
cinnamon, vanilla and stevia to taste)

Cook your oatmeal as you usually would and set aside. Grind up oats in food processor/blender till fine and combine with whole wheat flour, brown sugar, salt, cinnamon, pumpkin pie spice and baking powder. Melt butter and set aside to cool. In a separate bowl, whisk together milk, vanilla, honey, egg and cooked oats, adding butter once it has sufficiently cooled so that it doesn't cook the egg. Fold in flour mixture until just combined - don't over mix! Heat skillet on low/medium and spray with cooking spray before adding batter in
1/4 cup increments. Cook and enjoy! Add whatever toppings you'd like. I chose a few dark chocolate chips, walnuts and a drizzle of maple syrup - perfection!


I halved the original recipe and I kinda guesstimated on the amount of baking powder because I couldn't find it anywhere in the original post? I probably missed it somewhere along the way cause that's how things always seem to happen for me - still even with that, these turned out face melting. And I still have a ton of batter left! Does anyone know, can you freeze batter? Or how long it lasts in the fridge? I'll probably break out the rest of these bad boys tomorrow morning, but I'm just curious. As usual.

fit happenings.
So last night, I had to put the new kicks to the test and I decided to try for a personal record. I ran 5 miles straight. That's the furthest I've ever gone without stopping! That may or may not seem like a lot to you, but to me - it totally is.

It's not like I made great time or anything, I finished in 53:08 which averages out to about 10:36 or so a mile. I wasn't exactly trying to book it since it was my first time at this distance, but I think I could definitely go faster next time. I signed up for a 5 MILE RACE next weekend so knowing that I can do it now is really relieving. I'm totally stoked for it.

Oh! And is anyone planning on going to The Healthy Living Summit in August!? Tickets are going on sale tomorrow at 9 pm so don't miss out! I definitely plan on attending and if anyone is going from the Northern Ohio/Pennsylvania region, I'm down for some riding buddies and roommates! (:

  2. oooh those look lovely!! i am also a pumpkin-a-holic so they'd be right up my street lol! and congrats on your run! that's awesome that you entered a race too, nothing like a little competition to get you motivated hey?! i'd LOVE to go to that conference because it sounds like so much fun, but I'm actually going to another one that weekend, the Canadian Fitness Professionals (Can-Fit-Pro) conference which is an amazing weekend of all things food and fitness. my bday happens to be on aug 15th as well so i'm pretty sure it will be the best weekend of the year haha! i'm looking forward to your report afterwards though! :)
