Well say no more Ms. Hungry Scholar - Fit n Fresh is here to save the day! It's crazy to me that everyone doesn't already know how to make these, Momma Fit used to cook them up for me all the time as a kid. Go Momma!
First, you need to gather all the ingredients.
That was easy. I love easy! Which probably explains why I love one eyed jacks so much. Next, take a small juice glass and press it down into the middle of your bread.
It will leave you with a nice little 'eye'! You could also use your hands for this part and just rip out a circle in the middle, but I like to be professional with my breakfasts.
Get your griddle or pan ready so that it's nice and hot! You can put a little butter on both sides of the bread, but I normally just spray it with olive oil. Throw your bread on the pan, as well as your little eye - waste not, want not!
Now comes the fun part! Crack your egg open and drop it right down in the middle of your bread. Like so:
Let it sit for a few minutes and then give it a little flip.
Leave it alone for a minute or two and then - ta dah!! Breakfast is served!
Now seriously, how good does that look? And it took me about five minutes from start to finish. The yolk stays nice and gooey and the bread gets nice and crusty.
A perfect day following each breakfast is guaranteed. Now it's your turn!

ReplyDeleteMy fav breakfast was cereal, preferably something overly sugary and gross. Lol. Like honey nut cheerios or Lucky Charms!
I used to LOVE doing this! I always threw away the middle bread though and my mom would get annoyed. As a kid pretty much every single morning I would have a toasted bagel with cream cheese and butter dipped (yes, dipped) in cream of wheat. SO. GOOD.

ReplyDeleteThis was one of my favourites too! I used to get a little crafty and cut the hole out with cookie cutters instead of a glass.. I'd make stars and hearts and stuff - I figured I was pretty cool at the time. My other faves were Eggo waffles and poptarts (oh how the times have changed!!)

I used to love toast with cheese whiz :) I've never tried the egg in the basket!

I haven't had those since I was a kid! I think my mom called them frog in a hole? Although I can't imagine why... that would be a weird name...

How in the world have I not seen that before. It's like janky french toast?! I love it! Put some cinnamon on that and you're in the biz.
ReplyDeleteMy fave breakfast as a kid was purdy much any chocolate or marshmallow cereal followed by Pop Tarts. My how times have changed!

ReplyDeletemy favorite breakfast growing up was poached eggs... my mom would make them SO GOOD. and we'd put them on toast.
my grandpa's french toast was pretty epic, also. I miss that.
As a kid, I never loved breakfast, but I loved having lunch/dinner meals during breakfast time. I remember begging a favorite hang out place to make me pasta at 10:30 am, don't ask, haha.
ReplyDeleteBut I think one of my favorites was frozen waffles with maple syrup and ALWAYS grapefruit juice. For some reason, its a really good combination. Must be the sweet/sour combination
