Spelt Chia Pancakes with Banana Cream Sauce

I'm gonna do a normal post later, but right now it's all about this:


Try not to drool. Since an usual predicament left me walking my happy self home this morning, I had plenty of time to ponder about breakfast. I went through the usual suspects: oatmeal, eggs, cereal - but then remembered that I had some spelt flour I've been meaning to use in the kitchen. I'm not even gonna say how long it's been sitting patiently in my pantry.

Pancakes were the obvious chioce, but I wasn't really feeling syrup OR peanut butter. Weird, I know. But then I was struck with a glorious idea. Bananas! And this lovely little baby breakfast was born into my awaiting arms.


Spelt Chia Pancakes
1/4 cup spelt flour
1/2 Tbsp chia seeds
1/2 scoop protein powder
1/2 tsp baking powder
pinch of salt
2 Tbsp almond milk
1 Tbsp water
1 egg white
few drops of stevia
1/2 cup blueberries

Combine all of your dry ingredients together and mix thoroughly. Add your wet ingredients and combine. Don't overmix! As you pour each pancake on the griddle, add a handful of blueberries. Flip after 2-3 minutes. Then stack and top with Banana Cream Sauce!

Banana Cream Sauce
1/4 frozen banana
2 Tbsp almond milk
1 tsp agave nectar or honey

Toss banana into food processor. Process until the banana becomes small, choppy bits. Add milk and agave and process until smooth. Pour over pancakes.


Add a handful more of blueberries on top and you, my friend, are ready to feast! I also took the liberty of calculating the calories in the whole recipe.


Not bad! Not bad at all. While these still don't quite compare to my Peanut Butter Pancakes (but let's be honest, that's not even a fair competition), they were still very tasty! I might make a few tweaks to the recipe next time I make them, but if you're looking for a yummy way to end your Sunday - I think you just found it. (;

  12. LOVE this!! The banana cream suace looks so good!!! Ahhhhhhhhhhhhhhhhhhhh I need these , especially after a long day! Just got back to DC today, and now its packing time! Movers come this week! I need these pancakes for fuel!!!!!

  16. I want to make these so badly! I don't have spelt flour, but I'm sure they'll work out with whole wheat flour.

  21. Genius!! These are going to be my breakfast for.. tomorrow? Perhaps... yes. If I have time. Which I had better have because these look amazing and I want them asap. If I can't have them tomorrow than I will have them Tuesday. If I can't have them Tuesday then I'm just going to cry.
